Wash your squash thoroughly. Use a sharp knife to poke several slits deep into the base of the squash near the “navel”. Place on a parchment lined baking sheet, and place in a 350 degree F oven for 1.5-2 hours. Remove from oven and allow to cool before handling. Cut in half lengthwise. Use a a spoon to remove seeds and innards. Gently removed the flesh from the skin.
Choosing the Type of Squash
I prefer butternut squash for its flavor and texture, but you can cook many varieties of winter squash using this method. Consider trying butternut, buttercup, acorn, or even pumpkins!
No need to only cook one squash at a time. This recipe will work for as many whole squash as you want to cook (and can fit in your oven). Freeze the extra mashed squash for use in pies, soups, or other dishes.
