Simple Fruit Salad

This fruit salad is simple to make, and deliciously refreshing. Using whatever fruit is seasonally available or on sale, it renders an endless combination of flavors.

When I was engaged, I made a connection with some older women who chose a small group of younger women to mentor and teach.  We would meet regularly in their homes for meals, Bible study, and encouragement.  This was one of the recipes they shared with us, and I’ve used it ever since.

It’s simple, flexible, and tasty.  Plus, it keeps well for several days.

The recipe doesn’t call for any specific types of fruit, so have fun experimenting with different combinations, or just use whatever fruit is on sale, on hand, or in season.

Below I have included a list of some of my favorite fruits to use in my simple fruit salad.

Apples
Grapes
Blueberries
Mandarin Oranges (canned or fresh)
Peaches (canned or fresh)
Blackberries
Strawberries
Raspberries
Nectarines
Pineapple

Honesty, I don’t even measure the ingredients for this salad. I just throw together what I have.

Simple Fruit Salad

Ingredients

  • 2 Tbsp. lemon juice
  • 2 Tbsp. lime juice
  • 2 Tbsp. frozen orange juice concentrate
  • 2 Tbsp. sugar or 3 Tbsp. honey
  • 4 cups assorted fruits

Directions

First, wash and prepare (core, dice, peel, etc.) all fruit.

In a medium bowl combine lemon, lime, and orange juice concentrate with the sugar or honey.  Stir to combine.

Add prepared fruit.  Stir gently to coat.

Refrigerate at least an hour to allow fruits to “juice” and the flavors to meld for best results.

Store in the refrigerator in an air tight container.
