Green grazing boards are the perfect little snack to go along with a pastoral themed party or Vacation Bible School. Inspired by Psalm 23:2-3 where “He makes my lie down in green pastures”, this snack board is filled with all things green.
When I imagine green pastures in Ireland, I picture fluffy white sheep and cute little goats grazing on spring green grass. What better VBS themed snack than a grazing board. Since we’re talking about green pastures, why not make it ALL green. Basically, each child will get their own mini green fruit and veggie tray/charcuterie plate.
I chose apples, grapes, and cucumbers because these seemed to be things most children will eat and they are easy to work with. Thankfully, I have a lot of mom friends that I can talk to for some “market research” and I test out each recipe on my own kids for portion size and flavor before sharing.

Planning VBS snacks for 200+ people in a large age range is actually quite stressful. I do my best to calculate portion sizes and what supplies we need long in advance. You don’t want too much extra food, you don’t want wasted food that the kids don’t eat, and you certainly don’t want to run out! I’ve done my best to calculate EXACTLY what you need to implement this in your own VBS or day camp setting without any guesswork. Tweak the numbers as you see appropriate, but this can give you as strong start to your planning, especially if you aren’t mathematically inclined. Hope you find it helpful!

Preparing the Fruits & Vegetables
Green Grapes: use a kitchen scissors to cut each cluster of grapes along the stem, separating from the stem. This will separate off clusters of 4-8 grapes. I planned for 1 large cluster or two smaller clusters for each snack. A pound of grapes averages 80 grapes per pound. This would mean one pound is 10 servings of 8 grapes, and I’ve calculated based on those averages. For the preschoolers, remove the grapes from their stems and consider cutting them in half to reduce the risk of someone choking.
Green Apples: use an apple cutter/corer tool to cut the apples into 8 slices. Servings on the chart above are based on two slices (1/4 apple) per green grazing board. For preschoolers, consider cutting the slices in half and giving each child only 1/8th of an apple (or 2 half slices)
Mini Cucumbers: For the sake of not having to peel cucumbers for 200+ people, I opted for mini cumbers for our snack. It also made calculating easier. Cut both ends off the cucumber and then cut it in half. Slice each half into 4 “sticks”. I’m planning for 1/2 of a mini cucumber per person.
Pickles: Drain the pickles. Place one or two depending on the size of the pickles. Based on a couple brands (listed below) it appears that 6 ounces yields about 5 servings of pickles.
- Milwaukee Dill 32 oz = 20 per jar
- Vlasic Kosher Baby Dills 24 oz = 15 per jar
- Members Mark Petite Dill 46 oz = 29 two pickle servings per jar

HEALTHY: green grapes, green apple slices, broccoli, celery sticks, cucumber slices, green bell peppers, kiwi, peas, green dill/onion dip, pickles, guacamole, green olives, asparagus, green go-go squeeze applesauce pouches
SWEET: green M&M’s, green apple flavored candies (such as gummy rings), various mint flavored treats, green foil Hershey’s kisses.
SALTY: Harvest Snaps crisps, Vlasic pickle balls
