Italian Marinade Grilled Chicken

If you are looking for the easiest affordable protein to cook on the grill this summer, look no more, because this has got to be it (with the exception of hot dogs I suppose).   I LOVE the way this grilled chicken turns out tender and juicy every time.

This Italian marinade grilled chicken recipe is super easy to double for larger families and gatherings.   Extra chicken can be cubed and frozen for use in other recipes such as Chicken Alfredo, Chicken Noodle Soup,  and Chicken Pot Pie, or even eaten cold on salads or sandwiches.


Italian Marinade Grilled Chicken

Ingredients:

2-3 pounds boneless skinless chicken breasts, fresh or thawed*
1 bottle of Italian salad dressing

Marinade Overnight:

Arrange chicken breasts in single layer on the bottom of a large refrigerator container with lid (Alternately, you could use a gallon zipper lock freezer bag).  

NOTE: Sometimes I use a bag of individually frozen chicken breasts, other times I buy them fresh in family packs.  Either option typically offers 4-5 breasts in the 2-3 lb range.  It doesn’t have to be exact, and you can adjust your marinade accordingly.

Pour enough Italian dressing onto the chicken to cover.  Depending on the size of your container you’ll likely only need half the bottle and can save the other half for another meal.

Marinade in the fridge overnight.

Grill the Chicken:

Preheat grill to medium-high heat.

Remove chicken from marinade and place individual breasts on the grill. 

Close lid and cook 10-15 minutes, flipping once after 5-7 minutes.  Cook time may vary based on the thickness of your chicken breasts.  

Check that juices run clear and the inside is no longer pink.

Remove from grill, allow to rest, and serve!
