Admittedly, I am not the best for setting a good rhythm or consistent traditions in our day to day life. Some families are fantastic about a weekly Sunday Fun Day or Saturday Night Game Night. Even annual traditions outside of Christmas and Easter are difficult for me to maintain.
Despite my inconsistant efforts, the one things I am working toward creating as a lasting habit is Friday night pizza night. Do we have pizza every week? No. It’s not a pefect science, but I do hope that when my children are older they can look back and remember how a lot of, or maybe even most Fridays we made homemade pizza from scratch.
Reasons to do a regular pizza night
The first reason, is avoiding the “what do we have for dinner” dillema. While some are great at meal planning, I am not. I am more of a meal generalizer who keeps ingredients on hand for certain meals all the time, or plans meals for an upcoming week, but not a specific day. Friday night pizza can create a default for me to fall back on when I haven’t thought ahead for any other plan. “That’s right, it’s Friday. Tonight we can have pizza.”
Reason number two for doing a regular pizza night is leftover management. Any bits of ground burger, bacon, chicken, diced tomato, pineapple, or scrambled eggs that may have been left over from other meals in the week can easily be finished off, even if there isn’t enough for a full meal or casserole. That is the beauty of a “make your own” toppings bar.

Same Day Pizza Dough Recipe
Ingredients:
- 1 Tbsp. quick rise yeast
- 1 cup of warm water
- 1 Tbsp sugar
- 1/4 cup olive oil
- 1 1/2 cups of flour (all purpose, wheat, or fresh milled)
Preheat oven to 425F.
Combine warm water, yeast, and sugar in a mixer bowl fitted with a dough hook. Allow to bloom for a couple minutes until bubbly.
Add oil and flour. Mix until combined. Knead with a dough hook for 5 minutes.
FULL SHEET PAN
Roll the dough on a floured surface to a 13 X 18 inch rectangle and transfer to a half sheet baking pan. I like to line mine with baking parchment for easy cleanup.
INDIVIDUAL PIZZAS
Divide the dough into several balls. Roll each ball of dough on a floured surface to desired round size. Transfer to a half sheet baking pan. I like to line my pans with baking parchment for easy cleanup.
Top with desired sauce, cheese, and toppings.
Bake for 10-13 minutes until crust is golden and cheese is melted.
Slice and serve.
